Step-by-Step Vedic Method
Sourcing Himalayan A2 Milk
Every morning begins by procuring raw, fresh milk from free-grazing Himalayan cattle herds (including native Badri and local Uttarakhand cows), strictly verified for A2 beta-casein purity. These cows free-graze on pristine medicinal herbs, rich mountain shrubs, and clean high-altitude grasses of the Uttarakhand valleys, yielding nutrient-dense golden milk.
Boiling on Firewood
The fresh A2 milk is slow-boiled in large brass vessels over open earthen stoves (Chulha) fueled with local forest firewood. This traditional slow heat sanitizes the milk naturally while infusing it with a unique, rich smoky undertone that characterizes authentic mountain ghee.
Setting Curd in Clay Vessels
The boiled milk is cooled down to room temperature and inoculated with a traditional curd starter culture. It is then left to ferment overnight in thick earthen clay pots. Fermenting in clay maintains a balanced temperature, enriching the curd with beneficial organic cultures.
Traditional Wooden Bilona Churn
At sunrise, the set curd is churned back-and-forth slowly using a large wooden whisk (Bilona). This rhythmic churning separates the curd into fresh, unsalted butter (Makhana) and nourishing buttermilk, preserving the vital fatty acid chains without thermal degradation.
Slow Simmering & Granulation
The freshly separated butter is transferred into copper pans and slowly simmered on a firewood flame. The moisture evaporates, the solid proteins settle at the bottom, and a clear, golden, aromatic liquid emerges. It is filtered and allowed to cool, forming the signature granular structure.
